[You can also substitute paneer with Tofu]

Ingredients
- 2 Cups Paneer (cottage Cheese cut into cubes
- 1 medium onion sliced
- 1 teaspoon ginger grated
- 1 teaspoon garlic minced
- 2 tablespoon Oil
- 1/2 cup cream
- 2-3 medium tomatoes chopped
- 1 tablespoon Cashews
- 1-2 cinnamon sticks
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Garam Masala
- pinch Kasuri Methi / Dry Fenugreek leaves (optional)
Instructions
- Heat one teaspoon oil in pan and saute onion pieces, and add ginger and garlic . Cook for few couple of minutes. Puree the mix and in food processor and keep aside.
- Cut Paneer in small cubes. In a pan saute the paneer for 2-3 minutes.
- Drain on a plate lined with a paper napkin.
- soak it in warm water. This helps to keep the paneer soft.
(You could also use raw paneer.)
- Puree together tomatoes and cashews and keep aside.
- Heat oil in pan and add cinnamon sticks and pureed onion mix and saute, add red chilli powder, and cumin powder and saute for another minute.
- Add cream and cashew-tomato puree and Cook on high heat till oil leaves the masala.
- Finally add paneer cubes and bring it to a boil .
- Serve hot with Roti or Paranthas.
