Karahi Paneer (Cottage Cheese)
Karahi is a type of  thick, circular, and deep cooking pot and Paneer refers to fresh cheese. This recipe got its name by the process it is cooked. Paneer cubes cooked in rich Tomato, Capsicum, Onion, based gravy. Karahi paneer is of  my favorite paneer dishes. This always reminds me of Delhi-Gurgaon  dhabas (road side restaurants) near highway, one in Gurgaon- Delhi border served the best food. A delight for all vegetarians and Paneer (cheese) lovers!!
This recipe is best served with Naan/ Rice

Ingredients
- 1 250 gm/ 1/2 pound Paneer (cottage Cheese cut in cubes
- 1 tablespoon coriander seeds and 3-4 red chilles dry roasted and powdered
- 1 bell pepper (shimla mirch) chopped
- 2 tomatoes chopped
- 2 bay leaves
- 1 teaspoon ginger paste
- 1 tablespoon Oil
- Salt as per taste
- 1/2 teaspoon Garam Masala powder for garnish
- Cilantro for garnish
Instructions
- Cut paneer into cudes and and soak it in warm salt water. Aslo dry roast coriander seeds and red chillies and after it cools of grind it to a powder and keep aside.
- Heat oil in pan, add the ginger paste and cook on a slow flame for a few seconds then add chopped onions and saute it till it starts to change color
- Add the capsicum and ground spices and cook on a slow flame for couple of mins
- Add the tomatoes and cook it for few minutes till it starts to bend it with capsicum and onion,
- Add kasoori methi and salt and fry again for a few seconds, then add 1 cup of water.
- Finally, add the paneer cubes and cook for a few minutes.
Garnish with chopped cilantro and garam masala and serve hot with roti/ nan/ rice.
