Chole bhature  is a combination of chole (spicy chick peas) and fried bread called bhatura,  typically a  punjabi dish is enjoyed in northern part of India. Served with pickle and onions. Chole bhature is served in most of the Indian restaurants.

  1. Take yeast and soak in lukewarm water for 5-10 minutes / mix flour, salt, oil,yogurt and yeast and make a soft dough. keep aside for 2 hours, the longer kept, softer it gets.
  2. Heat, 2 teaspoon oil in a pan, add cumin seeds bay leaves and minced garlic. Saute it till its starts to get brown.
  3. Add onion, ginger paste, and all dry spices and saute for few minutes.
  4. Add tomato puree and chickpeas stir it well. add salt and a cup of water and cook in simmer for 15- 20 minutes. alternately you could pressure cook the chickpea mix for 10 minutes.
  5. Garnish choley with cilantro, thinly sliced long pieces of onion and a piece of lemon wedges.
  6. Heat oil in the pan, Roll it round or oval shape do not make it too thin.
  7. Gently drop it it hot oil. Stir it lightly to help it puff up. Fry like poori till both sides are golden brown. Serve it hot with onions and pickle Enjoy
