Pudina Pulao (Mint Rice)
Tempt your palate with an aromatic and cooling rice recipe, the mouthwatering Pudina Rice (Mint Rice). The fresh sprigs of mint or Pudina leaves are ground and then added to the rice while cooking to impart the delectable minty flavour. Mint is a herb which is widely used in Indian Cooking. Mint or Pudina has been used in healing remedies for many centuries.
For variation you could add vegetable (peas, carrots, beans,cauliflower) to the rice. Pudina pulao makes for an endearing meal to serve family on a hot summer afternoon. Served best with Raita and roasted papad.

Ingredients
- 21/2 cup basmati rice
- 1/4 cup fresh mint leaves
- 2-3 bay leaves
- salt as required
- 2-3 cinnamon sticks
- 1 teaspoon shah jeera (cumin)
- 2 tablespoon Oil
- For wet Grinding
- 1/2 inch ginger
- 3 green chillies
- 3 cloves garlic
- 1 cup mint leaves
Instructions
- Cook rice in rice cooker/ Pressure cooker / or in a pan, as you prefer.
with 21/2 cups of rice put little less than 5 cups of water. (so that the rice remains firm)
- Grind together the 1 1/2 cup mint leaves,garlic,ginger and 4 green chillies into a fine paste.
- In a wide pan, heat oil at medium flame and once it is hot, add the shah jeera, cinnamon and bayleaves. Saute until the aroma comes out, Add the chopped onion, chopped mint leaves, and green chillies. Saute until the onion becomes translucent
- Now add the ground paste,some salt and saute until it is incorporated well with the onion
- At low flame, add the cooked, cooled rice and remaining salt and stir well until the mixture is evenly combined with the rice.
- Cover with a lid and let the rice sit on low flame for about 3 to 4 minutes.
Serve hot with raita / pappad/ pickle.
