Palak Paneer (Spinach and Cottage Cheese)
Palak Paneer is a delicious, hearty North Indian dish prepared with spinach and Paneer (Indian cheese) sauteed or just thawed as per your liking. You could also use tofu, ricotta or cottage cheese. This traditional vegetarian dish is a rich and creamy where paneer cubes are cooked in a onion-tomato-spinach based gravy which is moderately spiced with Indian spices.You can alter the spice level by adding green chillies to make it more spicy or omitting paprika to make it more milder. I like mine mild. This curry makes a great accompaniment with rotis, naan or hot steamed rice.
Being born and brought up a vegetarian, I practically grew up on spinach. We make spinach and lentils, spinach parathas (bread) and  currys. Best of all both my sons enjoy spinach as much as we do 🙂
- 3 bunches spinach, blanced in hot water for 5 minutes
- ½ pound Sauted Paneer /cottage Cheese, substitute tofu or ricotta cheese
- 2 medium sized tomatoes, pureed
- 1 onion, chopped finely
- 1 teaspoon cumin seeds
- 1 tablespoon coriander Powder
- 2 teaspoon ginger, paste
- 1 teaspoon garlic, paste
- Salt, as per taste
- 1 teaspoon paprika (red chilli powder)
- 1 tablespoon cream, optional
- Blanch tomato in hot water,puree it and keep it aside.
- Add ghee in a heavy bottomed vessel and add cumin seeds and let them splutter. Add the onions and green chillis sauté them till light brown.
- Add ginger garlic paste and fry further for 3 minutes. Add red chilli pwd and coriander pwd and combine well.
- Add the tomato paste and let it cook for 5-6 minutes on medium heat.
- Add the palak paste and let it cook further for another 4-5 mtinutes.
- Add the fried paneer cubes and combine. Cook covered on low heat for 3 minutes. Add the palak water and salt and cook on medium heat for 10-12 minutes.
- Add malai, garam masala pwd ,Reduce flame, cover and cook for few minutes
- Serve hot with rotis or white steamed rice or rotis.
