Mutton Biryani
Mutton Biryani is a delicious dish made from Mutton (meat of lamb or goat) chunks cooked with various spices and Basmati rice. Biryani is used to denote a dish where the rice (plain or fried) is cooked separately from the thick sauce (curry of meat or vegetables). The curry and the rice are then brought together and layered, is then cooked together  resulting in a dish of the contrasting flavors. Traditionally Biryani is served with with salan (gravy) and Raita.
So here is my Mutton Biryani recipe for all my friends who requested it 🙂

Ingredients
- 2 pounds Mutton cut in small peices
- 3 Cups Rice
- 1 tablespoon ginger grated
- 1 tablespoon garlic minced
- 2 Onions thinly sliced (for garnish)
- 1 onion chopped
- 1/2 cup yogurt
- 2-3 cinnamon sticks
- 4 cloves
- 7-8 Black pepper
- 4 cardamom
- Salt to taste
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chilli Powder
- 1 teaspoon coriander Powder
- 2 teaspoon Garam Masala powder
- 1 tomato chopped
- Cilantro chopped
Instructions
- Marinate mutton in yogurt, salt, turmeric powder and one tablespoon each of ginger and garlic pastes. Marinate for about 1 hour in a refrigerator.
- Cook rice in 6 cups water along with whole Garam Masala (cloves, cinnamon, cardamoms and black pepper) till rice is three quarter done. Strain and keep aside.
- Heat oil in a thick-bottomed pan or pressure cooker. Cook, stirring continuously, till onions are light golden brown. Add remaining ginger paste and garlic paste and mix well. Add marinated mutton and cook on high heat for few minutes.
- Add coriander powder, cumin powder, garam masala and red chilli powder
- Add 2 cups of water and pressure cook till mutton is almost cooked. It normally takes two to three whistles to cook.
- Add chopped tomatoes and yogurt to mutton and cook for 15 minutes or till the gravy thickens
- Preheat oven to 300 F and in a n oven safe dish spread the rice then spread the mutton on top of the rice repeat this one more time.Cover the dish with aluminium foil and cook the biryani for 15 - 20 minutes. Sprinkle fried onions and cilantro.
- Serve it hot with Salan, Raita and salad.
