Banana Nuts Muffins
I could wake up every morning to the smell of fresh muffins baking in the oven, especially these. . Banana Nuts muffins is one of my favorite breakfast! I love the flavor of the muffins, you can taste the bananas. There isn’t a bunch of sugar too where all you taste is sweet.
Usually whenever you have overripe bananas that you don’t want to go  waste this is a perfect recipe to utilise your bananas. For healthier option you could replace all purpose flour with whole wheat flour and sugar with brown sugar, both versions are equally deliciously. I usually make my my muffins with whole wheat flour and my kids cant make out the difference.
Five Tips for Perfect Muffins:
1. Leave a few lumps. Over stirring can toughen a muffin.
2. Spray the liners with cooking spray before adding batter. Â
3. Check for doneness early (about 5 minutes before specified time) since ovens can vary.
4. Cool in the pan 5 minutes, then eat warm or remove to a rack so muffins don’t get soggy.
5. Store correctly so muffins stay fresh. Keep in an airtight container for a day or two. Or wrap  individually in plastic wrap, place all in a zip-top bag, and freeze up to one month. Thaw at room temperature or in microwave for 10 to 30 seconds

Ingredients
- 11/2 cups all purpose flour alyernately use whole wheat flour too
- 3 ripe banana
- 1 cup walnut chopped
- 1 teaspoon vanilla extract
- 11/2 teaspoon baking soda
- i large egg
- 1/3 cup melted butter/ shortening/ oil
- pinch Salt
- 1/2 cup raisins
- 3/4 cup sugar alternately use brown sugar
