Panchmel Dal (5 kinds of lentils mix)
Panchmel” means the mix of five. . As the name suggests it is a combination of five different dals flavourfully tempered. This recipe is traditionally made with the five very commonly used lentils in India. This is the protein-packed Rajasthani Dal recipe. Its texture is rich and creamy.  This healthy recipe is really easy to make.
I have used Mung, green whole Mung, Toor, Chana and whole Masoor dal. Green mung needs to be soaked overnight, alternately you can use Urad dal to replace Green mung too.
This lentil recipe is best served with roti/parantha/ nan and rice.

Ingredients
- 1/4 cup arhar/toor dal
- 1/4 cup sabut masoor dal
- 1/4 cup chana dal (yellow split chick pea)
- 1/4 cup Green whole mung soaked over night
- 1/4 cup Mung Dal alternately use Urad dal
- 1 cup onions chopped
- 1 cup tomatoes chopped
- 1 teaspoon Cumin Powder
- 1 teaspoon coriander Powder
- Salt to taste
- 1 teaspoon Tumeric powder
- 1 teaspoon Red Chilli Powder
- FOR TADKA (tempering)
- 1/2 cup Onions chopped
- 2 teaspoon ginger grated
- 2 green chillies slit in halfs
- 1 teaspoon minced garlic
- 1/2 cup cilantro leaves (dhania) chopped
- 1 tablespon butter/ ghee/ oil I use canola oil
- 1 teaspoon cumin seeds(jeera)
- 1 teaspoon mustard seeds
Instructions
- Wash and soak all lentils for 10 mins. Mix green mung which was soaked overnight too.
- In a pressure cooker add 2 teaspoon of oil and saute onions till translucent
- add the chopped tomatoes let it cook for 2 mins
- next all the dry spices turmeric, cumin, red chilli, and coriander powders and mix well
- drain all the water and mix the soaked lentils to the onion mix saute for few minutes,add salt to taste
- add 3 1/2 cups of water and close the pressure cooker. cook till done around 15 minutes
- Take a small pan add butter/ghee/ oil when it is hot add cumin and mustard seeds
- once they start to splutter add ginger, garlic, green chillies and chopped onions and saute it till brown.
- add chopped cilantro to the dal and mix, then add tempering on top of the cooked lentils.
- Serve this rice with roti/paratha/nan or just plain steamed rice
