Kalakand is a popular sweet made out of solidified, sweetened milk called Khoya and Paneer. On contrary to the traditional version this  recipe requires only 2 major ingredients Ricotta Cheese and Condensed Milk, the ingredients are readily available and all that is required is mixing and cooking in the microwave. Kalakand / Milk Cake is a recipe that is simple and easy and yet has the look that you’ve probably slaved over the dish for hours . If you are looking for a hassle free and shortcut version of Kalakand, this microwave recipe is perfect.

  1. In a microwave safe dish, mix the Ricotta Cheese, Condensed Milk and cardamom (elaichi powder) well . Cook in the microwave for 5 minutes uncovered.
  2. Take it out and mix well. Make sure that you loosen the edges as corners end to burn quickly. Back in the microwave 12 more minutes, stirring every 2 minutes.
  3. Grease a square or rectangle dish and grease it with ghee or butter. Pour the kalakand mixture and press down and flatten the mixture
  4. Also sprinkle the chopped pistachios on top. Let it set for 1 hour in refregerator or couple of hours on the counter top.
  5. Cut in to desired shape and serve. Enjoy !!
