Kalakand (Milk cake)
Kalakand is a popular sweet made out of solidified, sweetened milk called Khoya and Paneer. On contrary to the traditional version this  recipe requires only 2 major ingredients Ricotta Cheese and Condensed Milk, the ingredients are readily available and all that is required is mixing and cooking in the microwave. Ingredients
- 1 15 oz Ricotta Cheese whole milk
- 1 can / 14 oz Sweetened condensed Milk
- 1 teaspoon cardamom powder
- 11/2 tablespoon pistachios and Almond chopped
- 2 teaspoon rose water (optional ) alternatively use rose essence
Instructions
- In a microwave safe dish, mix the Ricotta Cheese, Condensed Milk and cardamom (elaichi powder) well . Cook in the microwave for 5 minutes uncovered.
- Take it out and mix well. Make sure that you loosen the edges as corners end to burn quickly. Back in the microwave 12 more minutes, stirring every 2 minutes.
- Grease a square or rectangle dish and grease it with ghee or butter. Pour the kalakand mixture and press down and flatten the mixture
- Also sprinkle the chopped pistachios on top. Let it set for 1 hour in refregerator or couple of hours on the counter top.
- Cut in to desired shape and serve.
