Chickpea Avocado Sandwich
Chickpea & Avocado  Sandwich is a healthy quick and easy lunch option. Chickpeas are my favorite legume–I love their creamy texture. Its most simple and easy lunch I have ever made.  Best part about this recipe is that you can  add whatever you salad you like, lettuce, tomatoes,cucumber,spinach, spring onions, sprouts, etc.
I came across this recipe few weeks back, and had to try this one, have already made these couple of times.  The salad filling is also great as a dip for an appetizer. This will be a great one to serve in the upcoming hot summer months.
NOTE : Also, this salad is best eaten the same day, as it turns  brown due to the avocado. Save the avocado pit and place it in the middle of the salad  to prevent browning.

Ingredients
- Bread Slices Use any one u like, I used multigrain bread
- 1 large Avacado
- 1/2 teaspoon ground black pepper
- 1/2 onion Chopped
- 1 small Tomato chopped
- 2 green chillies Chopped
- cilantro leaves ( hari dhania) Choppped
- 1 whole Juice of lemon
- salt as per taste
- 1 Can (15 oz) Chickpeas or Garbanzo beans you can use home boiled too
Instructions
- In a medium bowl, mash the chickpeas and avocado together. Add in cilantro, onion,tomatoes,cucumber and lime juice. Season with salt and pepper, to taste.
- Spread avacado spread on bread and dig in its deliciuos and healthy.
You could also grill your sandwich you wish.
