Quinoa Pulao (Fried Rice)


Quinoa pulao is packed with vegetables and protien rich dish. I could practically live on this, delicious and healthy.This recipe is a great way to clean out your refrigerator or even your freezer!  Use what you have on hand to make this dish. You could also add, mushrooms, bean sprouts and broccoli or any vegetable you like.  What better way to eat your veggies:)

Instructions

  1. Rinse Quinoa and leave it strainer for few minutes to dry.
  2. Toss the dry quinoa straight in the pot without water and allow to toast on medium heat for just a minute o dry all the moisture or so while you stir to prevent burning.
  3. Add your water, I use 11/2 cup of water for every cup of Quinoa. Bring to a boil, reduce to low, cover and simmer for approx 12 minutes.
  4. Remove lid, fluff with a fork, and If it's still a little soggy let it simmer for another minute or so until it's nice and fluffy.
  5. Heat oil in pan, add cinnamon sticks and and grated ginger and saute for till it browns.
  6. Add the veggies, cauliflower, peas, carrots, spring onions and green beans saute or few mins.
  7. Add Quinoa and salt and pepper and mix well. Simmer and cook for 5 minutes . Garnish Quinoa pulao with cilantro and garam masala. Serve hot with yogurt raita. Enjoy !

  1. This is such as great idea! I do use quinoa as a rice substitute for side dished, but I love the idea of using it as a main dish as well.
