Stuffed Eggplant (Bharwa Baingan)
Stuffed Eggplant (Bharwa Baingan) is  my  husband’s favorite baingan (eggplant) dish.  Baby Eggplants (Baingan) are stuffed with sour and hot spices and then cooked. This recipe is made in many different ways all around India, you can try variations like adding sauteed onions, or ground peanuts.  I like this recipe because its quick, easy to cook and tastes really good. This veggie curry tastes great with both chapatis and rice.

Ingredients
- 2 teaspoon Turmeric Powder (haldi)
- 1 teaspoon paprika (lal mirch)
- 2 teaspoon Cumin Powder (jeera)
- 2 teaspoon fennel powder (sauf)
- 2 teaspoon Amchur (dry mango powder)
- 3 teaspoon coriander Powder (dhania)
- Salt as required
- 1 1/2 tablespoon oil
- 12 small eggplants (baingan)
Instructions
- Wash the Eggplants (baingan) and take the top off leaving only the stick.
- Mix all the spices in a bowl and keep aside.
- Split the eggplant (baingan) from one side and stuff the spices with pushing with the finger. Do not split too much or else the spices come out while cooking.
- Heat oil in a pan and place the stuffed eggplants( baingan) in pan and cover and cook.
- Stir the eggplants every few minutes so that they cook all over.
- serve it with your favorite Indian Breads
