Punjabi Baingan Bharta is just one of the several versions of Baingan/Eggplant Bharta there are in Indian cooking. The word ‘Bharta’  refers to dishes in which the ingredients are roughly mashed either before or after the dish is prepared. A North Indian speciality of roasted brinjals, skinned and made into a simple but exotic preparation.

Baigan bharta is roasted brinjal cooked in tangy tomato gravy, this is one brinjal preparation that no one can say no to. The success of this recipe lies in how well you roast the eggplant/brinjal.

I like baigan bharta for its smoky flavor, bharta is best served with Roti and Tadka Dal (lentil). I hope you enjoy this recipe as much as we do 🙂

  1. Baingan Ka Bharta requires that the eggplant be roasted. You can do it any way you choose. Roast on a gas cooktop by just placing the eggplant straight on the burner and keeping the flame on low setting. Keep turning and cooking till all the skin on the eggplant is charred and the inner flesh looks really soft./or grill it/ or just roast in your oven.
  2. Once the eggplant is roasted, allow to cool fully and then peel off and discard the charred skin. Once cool, coarsely mash and keep aside for later use
  3. Now set up a pan on medium heat and add the cooking oil. When hot, add the cumin seeds when it starts to splutter add the garlic and fry for 1 minute.
  4. add onion and saute till it turns translucent.
  5. then add chopped tomatoes and peas let it cook for couple of mins, add dry spices and stir well
  6. Finally add eggplant and mix well. Garnish it with Chopped cilantro. Serve hot with Roti or rice.

    • thanks Michael, you are right the texture is same of baba ganoush. Only this is cooked with Indian spices.
