Green Chilli Pickle

Green Chilli Pickle is a delightful way to spice up any meal. This is an easy green chilli pickle or hari mirch ka aachar recipe. Somedays I crave for homemade pickles, my mom is an expert in instant pickles. She makes pickles out of everything, cauliflower, carrots, beets, garlic and ginger to name few. This green chilli pickle recipe is an instant one, gets ready in 2 days to start eating. I like to make these in small quantities so it can be consumed in 2-3 weeks.  It stays fresh for upto 4 weeks in room temperature. If you want a longer shelf life add more oil or keep it refrigerated.

Ingredients
  • Green Chilli - 2 cups ( Use any variety )
  • Lemon - 1 medium size ( 2 tblspn of juice ) You can use Vinegar too
  • Oil - 4 tablespoon
  • For Grinding:
  • Coriander Seeds / Thania - 3 tablespoon
  • Fennel Seeds / Saunf - 1 tablespoon
  • Mustard Seeds - 1 teaspoon
  • Fenugreek Seeds / - 1 teaspoon
  • Asafoetida / Hing - ½ teaspoon
  • Turmeric Powder / - 1 teaspoon
  • Salt - 1 tablespoon
Instructions
  1. Wash green chillis and wipe them dry. Now chop them into small pieces.
  2. Take Coriander, mustard, fennel and mustard seeds and make it into a coarse powder , use pulse setting in your blender

  3. Add the turmeric, Asafoetida / Hing and salt to the powdered spices..
  4. Add the powdered spices into a bowl and squeeze in the lemon juice. Now heat the oil till it smokes. Pour the smoking hot oil over the spices and mix well. mix well
  5. Now add in the chopped chilli and toss well with the masala.
  6. Take a clean, dry, air tight jar and pour the chillies into them.
  7. Cover and store them for 2 days before consuming.
