Rich fruit Cake
It was my husbands birthday and he does not like creamy cake’s that much, so when I came across this cake recipe, I knew it would be just perfect. My fruit cake recipe is does not have any sugar and butter, if like me u cake out the frosting.  Fruitcake  is a cake made with chopped  dried fruits (you could also add nuts). Everyone who likes fruitcake will love this recipe. Traditional fruit cake recipe calls for alcohol, I have substituted with orange juice.

Ingredients
- 1 cup pitted dates
- 1 cup orange juice
- 3/4 cup dried prunes
- 4 tablespoon molasses
- 1 teaspoon lemon rind finely grated
- 1 teaspoon orange rind finely grated
- 11/2 cups whole wheat self rising flour
- 1 teaspoon pumpkin spice
- 3/4 cup raisins
- 3/4 cup golden raisins
- 3/4 cup currants (munakka)
- 3/4 cup dried cranbery
- 3 large eggs separated
- 1 tablespoon apricot jelly warmed
- 1 cup confectioner's sugar
- 1-2 teaspoon water
- 1 teaspoon vanilla extract
Instructions
- Grease a 8 inch/ 20 cm round cake pan. Chop dates and dried plums and place in a pan. Pour over orange juice and let it simmer for 10 minutes. remove from heat and beat the fruit mixture until pureed.. add molasses and citrus rind and let it cool.
- Sift flour and spice together in a bowl. add the dried fruits.
- When the date and plum mixture is cool, whisk the egg yolks.
- Whisk the egg whites in separate bowl until stiff. Spoon the fruit mixture into the dry mixture and mix it together.
- Getly fold in egg whites. transfer into the greased cake pan and bake it in a preheated oven at 325 F for 1 hr 15 minutes. let it cool in the pan.
- bake it in a preheated oven at 325 F for 60 minutes. let it cool in the pan remove the cake from the pan
- brush the top with warm apricot jelly.to make the frosting, sift sugar into a bowl and mix it with enough water and vanilla extract to for a soft frosting.
- Lay frosting on top of the cake and trim the edges. decorate the cake with orange and lemon rind.
Wow, that’s one fruit packed cake! Looks chewy and thick 🙂 Nicely done!
This is the most unusual cake recipe I have seen. I like the fact that it is packed with fruit! Also, the lack of butter and sugar really does let all that goodness of the fruit shine through. I am sure the fruit more than makes up for not having those two ingredients. I am sure your husband enjoyed this and happy birthday to him!
