Coconut French Toast
Its spring break and both my sons every morning asks me what can we eat for breakfast mommy. And since both love French toast, we tried this recipe we had last summer, when we were vacationing in Scottsdale, Arizona
Coconut French toast is made with French bread (you can use regular bread too), coconut, milk, shredded coconut, nutmeg and sugar and a hint of paprika. When I make French toast, I usually use some sort of whole-grain bread and take it easy on the fat.

- Cut the bread in 1 inch slices
- Heat a large pan to medium. Whisk the first seven ingredients together in a large bowl.
- Dip the bread into the egg mixture for 1 minute each side
- Pour the coconut onto a plate. Then dip the slices in the coconut on both sides for an even coat.
- When the oil is hot, start frying. Cook for 1-2 minute per side. Watch for a crispy golden-brown crust. Cook in simmer as it tends to burn easily.
- Add more oil as needed and continue with the rest of the bread.
- Serve warm with maple syrup and berries
