Tomato Rice
Tomato Rice makes a great one-dish meal. This rice recipe is extremely flavorful rice dish using ripe red tomatoes and rice. It is a very delicious and simple to prepare . Pureed tomatoes are sauted with spices and then added to rice.
Alternate you could prepare the tomato gravy and mix with rice and cook together in rice cooker or pressure cooker.
In case you are wondering how is a girl from north making southern Indian dishes, well when I was in college my room mate was from south India  and her mother made amazing Lemon rice and tomato rice. Being a rice lover myself, I enjoyed these rice dishes a lot, so learned from her. And had been making it ever since. My kids love it too 🙂
Tomato rice is best served with Raita and Pappad .

Ingredients
- 2 CUPS basmati rice
- 1/2 cup carrot peeled and chopped
- 1/2 cup Peas
- 1/2 cup bell pepper (shimla mirch) chopped
- For wet Grinding
- 1 pound tomatoes wash and cut in pieces
- 1-2 pieces cinnamon sticks
- 3 pieces cloves
- 3 pieces cardamom
- 1 teaspoon Red Chilli Powder
- 1 tablespoon cilantro leaves ( hari dhania) chopped
- For Seasoning
- 2 green chillies slit
- 1 inch ginger chopped
- 2 piece Bay Leaf
- 1 tablespoon Spring onions/ Scallions
- 2 teaspoon Ginger Garlic Paste
- 2 tablespoon butter
- For Garnish
- 1 tablespoon fried cashews
- cilantro leaves ( hari dhania) chopped
Instructions
- Wash and Cook rice 3/4th done and keep aside. It is really important that the rice is not fully cooked otherwise it gets sticky and cuddles up.
- Boil carrots and peas till it becomes tender and keep aside.
- Saute bell peppers and keep aside.
- Grind together tomatoes, cardmom, cinnamon, cloves, cilantro leaves, and red chilli powder without adding water.
- Heat 2 teaspoon oil in a large pan add bay leaves, chopped onion, slit green chillies and cut ginger for few minutes.
- Add ground tomato mixture, little salt and simmer. Boil till the gravy becomes thick and oil starts to seperate.
- Add the sauteed vegetables and mix well.
- And finally add rice and mix well.
garnish rice with chopped cilantro and cashews.
Serve hot with Raita and pickle.
