Vegetable Sweet Corn soup
It is raining out here and wanted to have something warm, so I decided to make soup. Vegetable sweet corn soup is my all time favorite. Sweet Corn Soup is creamy goodness without the cream. This soup is very tasty and easy to make. Also this vegetarian soup is a fat free. What more can a girl ask for 🙂

Ingredients
- 1 can cream corn
- 1/2 cup carrots and peas
- 1/4 cup Green Beans cut in small pieces
- 1 teaspoon garlic minced
- 1 teaspoon ginger finely grated
- 1/2 small onion chopped
- salt as required
- 1 can vegetable broth
- Black pepper as per taste
- 2 teaspoon corn starch mixed with little water
- 1/2 cup water
- 2 tablespoon Cauliflower florets chopped fine
- 1 teaspoon Sugar (optional)
Instructions
- In a medium pot, add oil, Ginger and Garlic. Allow it to sizzle.
- Add Onions and saute for 30 seconds.
- Add Peas & Carrots, Green Beans and Cauliflower. Saute for 1-2 minutes
- Add can of Cream Stlye Corn, Salt and Pepper. Mix well.
- Add Water and Vegetable Stock. Mix and Bring to a boil. Cook the vegetables in simmer for few minutes.
- Mix a little water with the Corn Starch and add it to the soup. Add sugar and adjust salt if necessary.
- Garnish with Spring (Green) Onions and serve Hot with soy sauce and vinegar.
