1 tablespoon confectioner's sugar, sifted to decorate
Instructions
Put raisins in a small bowl, add the orange juice, and let it soak for 20 minutes.
Line a deep 10- inch round cake pan with wax paper and grease the paper; set aside.
Melt butter and chocolate together in a small pan over medium heat (double broiler) keep stirring. Remove from heat and set aside to cool.
In a electric mixer beat eggs, sugar and vanilla extract together for about 3 minutes until light and fluffy.
Stir in the cooled chocolate mixture.
Sift the flour, ground almonds, baking powder and salt. Add to the choclate and egg mixture.
Add orange rind and raisins
add almonds and fold everything together.
Spoon the mixture into the pre greased pan. Bake in a preheated oven, 350 F / 180 C, for about 40 minutes or until a toothpick inserted into the centre comes out clean.
Let it cool in the pan for 10 minutes then remove and let it cool completely on a wire rack. Dust with confectioner's sugar before serving.
